Pesto Orecchiete with Chicken Sausage

Pesto Orecchiette with ChickenSausage
 

Ingredients
-pasta (orecchiette or any other version)
-chicken sausage (I used apple)
-0.5 c frozen peas 
-1c green beans
-1/3 c. Pesto
-0.5 c. Parm cheese
-1 T olive oil

Drink
-white wine (Riesling)
The one we drank is from Palisade, CO.  Yummy!!  

Directions
1.  Boil some water.
2.  Pour yourself some wine.  Enjoy.  (Cut green beans??)
3.  Once the water begins boiling add the pasta. (Usually takes 12-13 minutes to cook)
4.heat up skillet with a bit of olive oil.  
  5.  Once the pan is hot, Begin cooking the chicken sausages ( usually takes 6-8 minutes to cook)
6.  Once chicken is done, pull chicken off.  add green beans and peas to pasta pot.  (About 3-5 minutes left on pasta)
7.  Begin slicing chicken sausages into pieces.
8.  Once pasta I& veggies are done, drain off water.  Keep 1/2- 1 c. Pasta water in remains
9.   Toss in chicken and pesto and Parmesan into pasta pot.  Mix mix mix! 
10.  If dish looks dry, add a smiggen of reserved pasta water. 
11.  Pour another glass of wine and load up a bowl with this delicious dinner and enjoy!!


Notes:
- I used fresh green beans and they seemed still pretty crunchy after 5 minutes in boiling water.  I should try  substituting frozen green beans instead.  
-  I used 4 sausages, and a full box of pasta.  Gave me two REALLy nice servings for dinner and enough for lunch leftovers.   Yumm
- only expensive part of this dish is the orecchiette pasta (easy peezy substitute to other shell pasta), fresh parm and pesto (should look to see if there is another homemade recipe that makes this more affordable)
-cook time was approximately 20-30 minutes including water boiling. 
- Easy dinner, cost??
